I know that October has been a month full of busy days for me. I am sure I am not alone. Sometimes making dinner is a last minute event and even with planning, having a dinner that can be made quickly is essential. I found Herbal Chicken Skillet recipe from Good Housekeeping which was easy and quick, and yummy!
One Pan Herbal Chicken Skillet

Quick, Healthy, and Easy Dinner!
Ingredients
- 1-pound mushrooms, halved
- 1 small onion, cut into 8 wedges
- 2 tbsp. olive oil
- 4 chicken-leg quarters
- 1 tsp. fresh or dried thyme leaves
- Salt and Pepper, to taste
Instructions
- Toss mushrooms, red onion, olive oil, and fresh thyme leaves in a heavy skillet.
- Top with 4 chicken-leg quarters; sprinkle with salt and pepper.
- Roast at 450°F 35 to 40 min. or until cooked through (165°F).
Notes
- This could also be made in a crockpot. Cook on low for 6 to 8 hours or until chicken is cooked to 165°F.
- Remember to use an oven mitt when handling the skillet, as it gets hot. I ended up with a crazy burn from grabbing the handle.
- Add additional seasonings and spices, to make the dish unique.
- This dish pairs well with greens and a olive and vinegar dressing.
