Can you believe it’s the last day of June? I seriously wouldn’t believe it except it has been super hot here in the desert. With the 4th of July this weekend I wanted something super refreshing that I can make and bring to the BBQ we are having. I was at Costco and they had a super good deal on organic raspberries and organic blueberries. I started brainstorming what I could make with them. How about a fruit salad?
First gather the ingredients you’ll need:
2 small bananas or 1 large one
2 Apples of your choice (I used red and delicious)
1 cup blueberries
1 cup raspberries
Start by chopping your bananas and apples into bite size pieces. My apples were fine but my bananas started to brown a little after an hour so you may want to squeeze a small amount of lemon juice on them to keep them from oxidizing.
You can also peel your apples if your little one wont eat them or you are afraid of choking. Although, I would recommend trying to get them to eat it with the peel as a lot of the nutrients are in the peel.
Then simply toss them with your blueberries and raspberries until it looks delicious!
You can also swap out the raspberries for strawberries if you prefer. I have to limit my strawberry intake due to my under active thyroid.
If you are going to a party with more adults you can also put them on skewars to make shish kabobs but be careful with the toddlers.
If you are having this salad at a BBQ or with other proteins then it’s fine how it is but if you are having it by itself you may want to add greek yogurt, a nut butter, sunflower or pumpkin seeds to boost your protein so you don’t get a sugar rush.
